Patch／"Kohada"(Gizzard Shad)

Champion of Edo style sushi ingredients. Shiny. Vinegared. Best in spring to fall.

Their names change as they grow, the youngest called Shinko, Kohada (Gizzard Shad), and finally called Konoshiro. Using 4 or 2 fillets for sushi. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
