Patch/"Aoyagi" (Round Clam)
Also called "Baka (damn) clam" as it sticks out its orange tongue from its shell.
Rub salted shellfish and boil to make sushi. Aoyagi is a name of place where round clams used to be harvested. Best in winter through spring. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
