Bonito "Katsuo" Spindle-shaped fish that exceeds 1 m in length. They are fast swimmers and migrate in large groups. Large part of the body is dark. Bonito are rich in mineral, iron and zinc. Seared Bonito using first catch in the early summer is a delicacy that inspire a famous Haiku poem. Fatty bonito returning in fall are called "Modori-katsuo" they are excellent sashimi. Bonito flakes are essential for many Japanese dishes and the most common fish stock. They were first used in Muromachi era, 1336 to 1573.
