Patch／"Anago" (Conger Eel)

A typical Edo style sushi. Slit it open to simmer. Put salty-sweet sauce on top.

Salt water fish very similar to eels. Conger myriaster in the family of conger eels is consumed for food. Best in summer when they are less fatty. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
