Conger Pike "Hamo" is a type of eel. Lives on soft sea bottoms at depth around 100 m. 1 to 2 m in length. Has a big mouth with sharp teeth. It often bites therefore called "Hamo" as the name sounds like eating in Japanese. Essential for Kyoto dishes. Best season is summer. it is essential for the "Gion Festival" and considered a source of vitality and energy. Parboiled conger pike and "Tempra" deep fry are poplar ways of cooking, but only after removing the bones as it has many.
