Patch／Akami (lean Bluefin Tuna)

Sour lean meat around the spine. Also called "Zuke" as its soaked in soy sauce. Akami is soaked in soy sauce for preservation as they get oxidized and turn black. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
