Patch／Otoro (Fatty Bluefin Tuna)

Fatty belly meat "Toro" in Japanese is named after rich and creamy (Torori) taste. Otoro is bellows belly or fat underbelly of tuna. Because of its tough muscles, it is stored in ice for ripening. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
