Red minced meat wrapped in dried sea weed with vinegared rice.
Called "Iron on fire" in Japanese because it resembles red-hot iron bars. It used to be a leftover after tuna lean flesh was cut out for sushi. People used to ferment fish with rice for preservation before Edo style sushi appeared around 1716.
